Mary Ada Marshall has been baking cakes since she was 11 years old. Ten layer cakes are the norm among women in her island home and have been a staple as long as anyone remembers. Watermen carry slices in their bales. Now known as Smith Island Cake, it became Maryland's official dessert in 2008. Manzo came to the island to manage the Chesapeake Bay Foundation's program and has been baking cakes since her arrival. She hopes to work in a bakery in the future.
